Coffee Java Bread
Makes: 1 loaf (about 10–12 slices)
Bake: 350°F for 50–60 minutes
Ingredients
2 cups all-purpose flour
¾ cup granulated sugar
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
2 tablespoons instant coffee or espresso powder
½ cup strong brewed coffee, cooled
½ cup milk
2 large eggs
½ cup unsalted butter, melted and slightly cooled
1 teaspoon vanilla extract
½ cup chopped walnuts or pecans, optional
½ cup semisweet chocolate chips, optional
Directions
Heat oven to 350°F. Grease a 9 × 5-inch loaf pan and lightly flour it, or line it with parchment paper.
In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, and instant coffee powder.
In another bowl, whisk the brewed coffee, milk, eggs, melted butter, and vanilla until combined.
Pour the wet ingredients into the dry ingredients. Stir just until no large streaks of flour remain; don’t overmix.
Fold in the nuts and/or chocolate chips, if using.
Spread the batter evenly in the prepared pan.
Bake 50–60 minutes, until a toothpick inserted near the center comes out clean or with a few moist crumbs.
Cool in the pan for about 10 minutes, then transfer the loaf to a wire rack to cool.
Coffee glaze (optional): Mix 1 cup powdered sugar with 1½–2 tablespoons strong brewed coffee and ¼ teaspoon vanilla. Drizzle over the completely cooled loaf.
