Top with the other half of the roll and serve hot.
🌶️ Spicy Cheese & Chorizo Torta

Cook 8 oz Mexican chorizo until browned and crumbly. Layer it onto toasted bolillo rolls with melted Oaxaca cheese, refried beans, avocado, pickled jalapeños, and crema.

🥑 Grilled Cheese & Avocado Torta

For a meatless version, use grilled Oaxaca or queso panela, avocado, tomato, onion, lettuce, refried black beans, and a chipotle-crema sauce.

Tip: Oaxaca cheese gives the torta that wonderful stretchy, melted-cheese texture. A crusty bolillo is ideal because it holds up well to the beans, cheese, and toppings.
